Sichuan Pickled Plums

Step 1.

Halve and pit your plums.

Step 2.

Add all the ingredients to a saucepan and bring to a simmer.

Step 3.

Cook for 5-6 minutes until the plums are just starting to soften.

Step 4.

Remove the plums from the liquid and add them to a clean jar. Reduce the pickling liquid by a third, pour over the plums and seal the jar.

550g Plums
300g Red Wine Vinegar
200g White Sugar
50g Dark Brown Sugar
2 Star Anise
1 Tsp Sichuan Peppercorns
2 Tsp Dark Soy Sauce
