Sausage & Egg McMuffin
Step 1.
Make the sausage patties by removing the sausages from their skin and shaping them into 8 forty gram balls. Flatten them into a disc shape which is slightly bigger than the diameter of your muffin, because they will shrink as they cook. If you don’t have scales, forty grams is two-thirds of a regular sausage.
Step 2.
Fry your sausage patties in a dash of olive oil on medium heat.
Step 3.
Cut your muffins in half and butter them. Place a slice of American cheese on four halves of the muffins and place them in the oven for 10 minutes at 180°C / 160°C fan.
Step 4.
When your sausage patties are a few minutes from being ready, heat some butter in a separate frying pan. To make the eggs in authentic fashion, you will need egg rings to give them a regular shape. Place the egg rings in the frying pan, crack them in, and place a lid on top so the heat cooks the top of the eggs. If you don’t have egg rings, just fry them as usual — it won’t make a huge difference.
Step 5.
Remove the muffins from the oven and assemble the sandwich, using two patties per muffin.
