Step 1. Cut up the pineapple, saving a slice and a pulling out a leaf for garnish.

Step 2. Crush your ice (I put it in a tea towel and slam it against hard surface)

Step 3. Put your crushed ice into a blender with the rum, pineapple juice, cream of coconut and the fresh pineapple chunks.

Step 4. Blend until smooth.

Step 5. Pour into a glass of your choosing and garnish with the pineapple piece, leaf and glacé cherrie.

60ml White Rum
60ml Pineapple Juice
60ml Cream of Coconut
200g Fresh Pineapple
Ice (Crushed)
Glacé Cherries for garnish (Optional)
