Peanut Butter Tofu

Step 1.
Cut your tofu into strips. Place in a bowl. Add 2 tbsp of soy sauce, a heaped tsp of grated ginger and a grated red chilli. Add half a tin of coconut milk and mix everything together.
Step 2.
Peanut butter sauce time. Into a bowl, add the peanut butter, a heaped tsp of grated ginger, the rest of the coconut milk and a tbsp of soy sauce.
Step 3.
Mix everything together. If it is too runny, add a bit more peanut butter until you have a thick sauce.
Step 4.
Add 1 part rice to 2 parts water and boil until the water has been absorbed.
Step 5.
Add the tofu to a griddle or frying pan. Cook each strip for 2 minutes on each side on a medium-high heat.
Step 6.
Serve the tofu on the rice with the peanut butter sauce drizzled over the top. Sprinkle some chopped up peanuts over the top and throw on a handful of coriander. Enjoy!
