Chicken Satay Noodles

Step 1.

Add chicken breasts to a pan of boiling water. Boil for 8 minutes until cooked through.

Step 2.

Remove chicken from the water and shred it up.

Step 3.

Add noodles to then chicken water and cook for 3 minutes. Drain.

Step 4.

Get a wok on. Add your coconut milk, peanut butter, fish sauce and soy sauce. Mix everything together and bubble on a high heat for 30 seconds.

Step 5.

Add your chicken. Mix it in. Add your noodles. Stir everything together.

Step 6.

Add a handful of chopped spring onions. Stir them in.

Step 7.

Serve up the noodles into 4 bowls. Add some bashed up peanuts on top. Tuck in.

Bashed up peanuts add the perfect crunch.

500g Chicken Breast
Bunch of Spring Onions
400ml Coconut Milk
1 Tbsp Fish Sauce
400g Egg Noodles
1 Heaped Tbsp Smooth Peanut Butter
3 Tbsp Soy Sauce
Salted Peanuts (Crushed)
