Finely slice your garlic.
Squeeze the meat out of sausages and make small balls. Add to a frying pan on a medium heat.
Once the meatballs start to brown, add the chilli flakes and the garlic. Before the garlic starts browning, add the balsamic vinegar and allow it to reduce.
As it starts to caramelise, add your tomatoes and leave the sauce to simmer.
Start cooking the pasta, following the instructions on the packet.
Once the sauce is reduced, season with salt and pepper, tear in some basil and add a splash of pasta water.
At this point, drain your pasta and add it to the saucepan. Toss everything together, and then serve on warm plates, with mozzarella torn over the top. Finish with parmesan, more basil and pepper. Enjoy.
