Sustainability in the Kitchen: Where to Begin?
Hey MOB my name is Soph. I’m a food writer and chef and for the past two years I’ve had the pleasure of working with the MOB Kitchen gang, creating recipes and most recently writing Earth MOB - our bible for being more sustainable in the kitchen.
We know how much you care about the environment so with the advent of our new website, we’ve created Green MOB in order to bring you conversational, snappy and helpful articles on sustainability.
Now where to begin?
Do we look at waste; the surplus food and rubbish that we throw away daily? Starting with this feels slightly like heading towards a particularly bad hangover without assessing how the party got quite so out of hand in the first place.
Perhaps then we need to look at the way we consume? What impact on the environment does our increasing appetite for global ingredients and reliance on unseasonably well stocked supermarkets have?
More to the point what can we do about it? At times I feel bombarded by Instagram algorithms who’ve tuned in to my want to be more sustainable and then adversely are advising me on what I should buy next.
Trying to be sustainable is at best confusing (why isn’t there a single recycling system?) and at worst overwhelming (will there really be more plastic than fish in the ocean in the foreseeable future?), which is why I’m going back to basics.

Every week I will be tackling one concern and giving no frills advice on how we can be better, one small step at a time. We’ve gathered up some of your thoughts as a starting point and would love to hear more from you as we navigate this journey. Journey being the key word.
Given that things have enforcedly slowed down, now seems a pretty good time to take stock and think more about our actions and the environment. Without wanting to sound too spiritual Mother Nature seems to be reasserting herself at the moment. I’ve never heard more birds or seen more stars in the sky in London. Becoming more attuned to nature makes me feel hopeful in these challenging times, and hopeful for the future of the planet.
