Seriously PASTA SIX WAYS

Six seriously easy ways to vamp up your pasta classics, using Seriously Spreadable.

Seriously Broccoli Spaghetti

Cooking Time (Including Preparation Time): 20 Minutes

Notes:

Add extra chilli if you want more of a kick.

Feeds: 4 People

Ingredients:

  • 400g of Whole Wheat Spaghetti

  • Half of a Broccoli

  • 3 Cloves of Garlic

  • 2 Tsp Chilli Flakes

  • Bunch of Parsley

  • 1 Pot of Seriously Spreadable

  • Pepper

Method  

  1. Prepare your spaghetti (see pack instructions). When draining the spaghetti, remember to reserve about a cup of the pasta water. We will need this later in the recipe.

  2. Heat a tablespoon of olive oil in a frying pan. Chop your broccoli into individual florets and begin to fry in the pan. Slice the garlic into thin discs and finely chop up the parsley. Add both the garlic and the parsley to the broccoli with the chilli flakes. Stir.

  3. Add a splash of pasta water along with one heaped tablespoon of Seriously Spreadable to the pan and stir well, until the Seriously Spreadable is fully mixed in. Add a dash of pepper. Stir the cooked spaghetti into the Seriously creamy sauce. Serve up and tuck in

Seriously Chorizo & Macaroni

Preparation Time (Including Cooking Time): 20 Minutes

Notes:

Don’t use olive oil when frying the chorizo - it will cook in its own fat!

Feeds: 4 People

Ingredients:

  • 400g of Macaroni

  • 1 Ring of Chorizo

  • 2 Cloves of Garlic

  • Bunch of Parsley

  • 1 Lemon

  • Pot of Seriously Spreadable

  • 2 Tsp of Chilli Flakes

  • Salt

  • Pepper

Method:

  1. Prepare the macaroni (see pack instructions). Drain, reserving a cup of the pasta water, and leave the macaroni to one side.

  2. Break the chorizo into small chunks and fry in a non-stick pan. Slice your garlic into thin discs and finely chop the parsley stalks, reserving the leaves for later. Add both the stalks and the garlic to the frying pan and allow it to cook in the chorizo fat. Add half a cup of the reserved pasta water along with the juice and zest of one lemon. Mix well.

  3. Add one heaped tabled spoon of Seriously Spreadable and mix in well until you have a seriously creamy chorizo sauce. Next, stir in the cooked macaroni along with a splash of pasta water and the chilli flakes. Finely chop the remaining parsley and mix that in too. Dish up and get stuck in to this Seriously delicious macaroni.

Seriously Tuna Bake

Cooking Time (Including Preparation Time): 40 Minutes

Notes:

Make sure you drain your tuna and sweetcorn fully so you don’t have a runny bake.

Feeds: 4 People

Ingredients:

  • 400g of Fusilli

  • 200g of Sweetcorn

  • 2 Tins of Tuna

  • 1 Pot of Seriously Spreadable

  • 1 Tsp of Cayenne

  • Bunch of Parsley

  • 150g of Breadcrumbs

  • Olive Oil

  • Salt

  • Pepper

Method:

  1. Pre-heat the oven to 180°C.

  2. Prepare the fusilli (see pack instructions). Drain and leave in the sauce pan.

  3. Drain your tuna and sweetcorn. Break apart the tuna lightly using a fork before adding alongside the sweetcorn, cayenne, one heaped tablespoon of Seriously Spreadable, a pinch of salt and a sprinkle of pepper to the fusilli and mix well. Roughly chop the parsley and add this to the tuna-pasta and mix well.

  4. Transfer the tuna-pasta to an oven dish. Top with breadcrumbs, salt and pepper. Drizzle some olive oil on top then whack it in the oven for 30 minutes. The breadcrumbs should turn golden and crispy. At this point, you are ready to take it out the oven and serve up to your MOB.

Seriously Pesto Pasta Salad

Cooking Time (Including Preparation Time): 20 Minutes

Notes:

Making your own pesto is super easy, say goodbye to the shop bought stuff!

Feeds: 4 People

Ingredients:

  • Bunch of Basil

  • Bunch of Chives

  • Bunch of Mint

  • 1 Pot of Seriously Spreadable

  • 100g of Pine Nuts

  • 1 Lemon

  • 400g of Fusilli

  • Olive Oil

  • Salt

  • Pepper

Method:

  1. Prepare the fusilli (see pack instructions). Drain, reserving about a cup of the pasta water, and leave to one side.

  2. Prepare your pine nuts by toasting them lightly in a non-stick frying pan.

  3. Add a handful of chives, basil, mint, 50g of toasted pine nuts, one heaped tablespoon of Seriously Spreadable, a tablespoon of olive oil, the juice of a lemon, and a pinch of salt and pepper to a blender. Blend until all ingredients are combined and you have a smooth pesto.

  4. Stir the pesto in with the cooked fusilli. Roughly chop the remaining basil and add this to the pasta along with another 50g of toasted pine nuts. Pour a splash of the reserved pasta water onto the pasta and mix together until the pesto and pasta are completely combined. Serve up and tuck in!

Seriously Fajita Pasta

Cooking Time (Included Prep Time): 20 mins

Notes:

Feeds: 4 People

Ingredients:

  • 400g of Fusilli

  • 1 Red Pepper

  • 1 Yellow Pepper

  • 1 Red Onion

  • 250g of Chicken Breasts

  • 2 Tsp of Smoked Paprika

  • 400g of Black Beans

  • 1 Pot of Seriously Spreadable

  • 200g of Sweetcorn

  • Bunch of Coriander

  • Olive Oil

  • Pepper

  • Salt

Method:

  1. Prepare the fusilli (see pack instructions). Reserve about one cup of the pasta water before draining the fusilli, and set both to one side.

  2. Slice your peppers into matchsticks and slice your onion into semi-circular strips. Heat a tablespoon of olive oil in a frying pan and add the sliced peppers and onion. Fry for about 5 minutes and then add the chicken breasts. As the chicken cooks, use your spatula to break the breasts into smaller chunks. Add the paprika, pepper and salt and continue to stir-fry.

  3. Once the chicken is cooked through (it should be completely white in the middle), add the black beans and two tablespoons of Seriously Spreadable. Stir the Seriously in well, until completely combined. Then stir in the sweetcorn.

  4. Finally, stir in the fusilli with half a cup of the pasta water that it was cooked in. Sprinkle with chopped coriander and tuck in to this spicy little number.

Seriously Smoked Bacon Penne

Cooking Time (Included Prep Time): 20 mins

Notes:

Don’t forget to save some pasta water - adding this to the sauce will make it the most creamy dish EVER.

Feeds: 4 People

Ingredients:

  • 400g of Penne

  • 200g of Bacon

  • Bunch of Parsley

  • 2 Cloves of Garlic

  • 1 Pot of Seriously Spreadable

  • Pepper

  • Olive oil

Method:

  1. Prepare the penne (see pack instructions). When draining the pasta, remember to reserve about a cup of pasta water and leave it to one side.

  2. Cut your bacon into slices and begin to fry with a splash of olive oil in a non-stick frying pan. Stir the bacon. Finely chop your parsley and cut your garlic into thin discs. Once the bacon begins to turn crispy, stir in the garlic and half of the parsley.

  3. As the garlic begins to brown, add a splash of the reserved pasta water. Next, add two tablespoons of Seriously Spreadable to the pan along with another half cup of pasta water. Stir in until you have a Seriously creamy sauce.

  4. Add the penne and mix it in well with the sauce. Finally stir in the remainder of the chopped parsley with a sprinkle of pepper and serve up! Get stuck in.
