Puff Pastry Pizza (3 Ways)

So easy – the cheat’s pizza.

NOTES:

Blind baking is key. It means you’ll get a crisp bottom.

INGREDIENTS:

For the Pizza Base:

  • Plain Flour - £0.40

For the Parma Ham One:

  • 1 Pack of Parma Ham - £1.70

  • 100g of Parmesan - £2.00

  • 70g of Rocket - £1.00

  • Balsamic Glaze - £1.00

  • 1 Lemon - £0.30

  • 500g of Passata - £0.35

  • Garlic - £0.30

  • 1 Bunch of Basil - £0.70

  • 1 Ball of Mozzarella - £0.47

 For the Roasted Vegetable One:

  • Roasted Vegetables One

  • 1 Jar of Pesto - £1.00

  • 500g of Passata - £0.35

  • Garlic - £0.30

  • 2 Courgettes - £0.76

  • 3 Peppers - £1.50

  • 2 Aubergines - £1.20

  • 1 Bunch of Basil - £0.70

  • 1 Ball of Mozzarella - £0.47

 For the Mushroom One:

  • Balsamic Vinegar - £1.00

  • 3 Red Onions - £0.50

  • 1 Lemon - £0.30

  • 1 Bunch of Thyme - £0.70

  • 125g of Goat’s Cheese - £1.50

  • 2 Portobello Mushrooms - £1.00

 

  • EACH ONE COMES TO UNDER £10 - This covers absolutely everything. All we assume you have in your kitchen beforehand is SALT, PEPPER AND OLIVE OIL.

 

METHOD:

  1. Preheat oven to 180°C/356°F.

  2. Make your sauce. For the tomato base, chop two cloves of garlic. Fry until soft, then pour in 500g of Passata. Allow to reduce, and then add a handful of basil. Once the sauce is thick, remove from the heat.

  3. For the caramelized onion base, chop 3 red onions into slices. Fry on a gentle heat, adding a splash of balsamic vinegar every 4-5 minutes. By the end, you should have added 3 - 4 splashes. When the onions are sticky and soft, remove from the heat.

  4. Now for the pastry. This stage is the same for all three pizzas. Roll out your puff pastry so it is as thick as a £1 coin. Lift it onto a sheet of baking paper and place on a baking tray. Now, use a fork to prick the pastry all over. This will prevent it from rising too much. Then take a knife, and make a border, 2cm from the edge, so you can make the crust. Cover the top of the pastry with baking paper and place in the oven for 15 minutes. It will rise a bit, don’t worry.

  5. Remove pastry from oven.

  6. For the Roasted Vegetable One, spoon over some tomato sauce, stopping at the 2cm border. Take a ball of mozzarella and tear it over the tomato sauce. Separate the yolk from 1 egg, whisk it up and brush the yolk over the crust. This will make it go nice and golden. Then bake in the oven for 25 minutes.

  7. When the crust is golden and the cheese is melted, take out the pizza. Lay over some roasted peppers, courgettes and aubergines, dollop some pesto on top and garnish with some basil leaves.

  8. For the Caramelised Onion One. Spoon on your onions, stopping at the 2cm border. Slice your mushrooms and layer them on top. Crumble goat’s cheese on top of the mushrooms, grate over the zest of a lemon, throw on a handful of thyme leaves, and season with salt and pepper. Brush the crust with yolk and bake for 25 minutes. Scatter rocket on top before serving, and squeeze over some lemon juice.

  9. For the Parma Ham One. Spoon over some tomato sauce, stopping at the 2cm border. Take a ball of mozzarella, tear it up and scatter it on top of the tomato sauce. Brush the egg yolk on the crust, and bake for 25 minutes.

  10. Remove pizza from oven. Layer your parma ham over the top, throw on a handful of rocket, grate some Parmesan over the top and to finish, drizzle some balsamic glaze and olive oil. Enjoy!
