  • EACH ONE COMES TO UNDER £10 - This covers absolutely everything. All we assume you have in your kitchen beforehand is SALT, PEPPER AND OLIVE OIL.



  1. Preheat oven to 180°C/356°F.

  2. Make your sauce. For the tomato base, chop two cloves of garlic. Fry until soft, then pour in 500g of Passata. Allow to reduce, and then add a handful of basil. Once the sauce is thick, remove from the heat. For the caramelized onion base, chop 3 red onions into slices. Fry on a gentle heat, adding a splash of balsamic vinegar every 4-5 minutes (should be 3-4 splashes by the end). When the onions are sticky and soft, remove from the heat.

  3. Now for the pasty. This stage is the same for all three pizzas. Roll out your puff pastry so it is as thick as a 1-pound coin. Lift it onto a sheet of baking paper and place on a baking tray. Now take a fork, and prick all over the pastry. This will prevent it from rising too much. Then take a knife, and make a border, 2cm from the edge, so you can make the crust. Cover the top of the pastry with baking paper and place in the oven for 15 minutes. It will rise a bit, don’t worry.

  4. Remove pastry from oven.

  5. For the roasted vegetables one, spoon over some tomato sauce, stopping at the border. Take a ball of mozzarella and tear it over the tomato sauce. Separate the yolk from an egg, whisk it up and brush the yolk over the crust. This will make it go nice and golden. Then bake in the oven for 25 minutes. When the crust is golden and the cheese is melted, take out the pizza. Lay over some roasted peppers, courgettes and aubergines, dollop some pesto on top and garnish with some basil leaves.

  6. For the caramelised onion one. Spoon on your onions, stopping at the border. Slice your mushrooms and layer them on top. Crumble goat’s cheese on top of the mushrooms, grate over the zest of a lemon, throw on a handful of thyme leaves, and season with salt and pepper. Brush the crust with yolk and bake for 25 minutes. Scatter rocket on top before serving, and squeeze over some lemon juice.

  7. For the parma ham one. Spoon over some tomato sauce, stopping at the border. Take a ball of mozzarella and tear it over the tomato sauce. Brush egg wash on the crust, and bake for 25 minutes. Remove pizza from oven. Layer your parma ham over the top, throw on a handful of rocket, grate over some parmesan and drizzle over some balsamic glaze and olive oil. Enjoy!
