A delicious, simple plant-based pasta dish. Alpro works a treatttt here.
Cooking Time (Includes Preparation Time): 20 Minutes
500g of Petit Pois
1 Red Chilli
500g of Linguine
300g of Alpro Plain Unsweetened
2 Garlic Cloves
1 Bunch of Mint
Boil your peas and drain them.
Add 3/4 of the peas to a blender with your Alpro Plain Unsweetened. Blend until a smooth green sauce. Mash the other 1/4 of the peas in a bowl.
Get your pasta on (follow pack instructions).
Finely chop your garlic and red chilli. Add to a pan with a splash of olive oil. Fry for a minute.
Reserve 6 tablespoons of the pasta water.
Drain the pasta and add to the garlic and chilli pan. Add your mashed peas and toss everything together.
Pour in your green sauce along with a large handful of chopped mint and the zest and juice of a lemon. Season well with salt and pepper. Add your pasta water and toss everything together.
Serve your pasta in bowls with mint and chopped chillies scattered on top. Drizzle over some more olive oil and tuck in!
