Plant-Based Creamy Minty Pea Pasta

Cooking Time (Includes Preparation Time): 20 Minutes


  • 500g Petit Pois

  • 1 Red Chilli

  • 1 Lemon

  • 500g Linguine

  • 300g Alpro Plain Unsweetened

  • 2 Cloves of Garlic

  • Bunch of Mint


  1. Boil your peas.

  2. Drain peas. Add 3/4 of them to a blender with your Alpro Plain Unsweetened. Blend until a smooth green sauce. Mash the other 1/4 of the peas.

  3. Get your pasta on (follow pack instructions).

  4. Finely chop your garlic and red chilli and to a pan with a splash of olive oil. Fry for a minute.

  5. Reserve 6 tablespoons of the pasta water. Drain pasta, and add to the garlic and chilli. Add your mashed peas, and toss everything together. At this point, pour in your green mint sauce, and add a large handful of chopped mint and the zest and juice of a lemon. Season well with salt and pepper. Add your pasta water, and toss everything together.

  6. Serve your pasta in bowls, with mint and chopped chillies scattered on top. Drizzle over some more olive oil and tuck in!
