Mob Leftovers (2 Ways)

Way 1: Coronation Turkey

Fresh inspiration for using up that leftover turkey.

Cooking Time (includes preparation time): 1 Hour

Ingredients:

  • 500g of Leftover Turkey

  • 4 Jacket Potatoes - £1.32

  • Curry Powder - £1.00

  • Plain Yogurt - £0.85

  • Mayonnaise - £1.00

  • Mango Chutney - £0.87

  • Sultanas - £0.97

  • 100g of Flaked Almonds – £1.30

  • A Bunch of Coriander - £0.70

  • 1 Lemon - £0.30

  • Total Cost - £8.31 - This covers absolutely everything. All we assume you have in your kitchen beforehand is SALT, PEPPER AND OLIVE OIL.

Method:

  1. Preheat oven to 180°C/356°F. Place jacket potatoes on a baking tray. Season with salt, pepper and olive oil. Place in oven for 1 hour or until soft in the middle.

  2. Toast 100g of flaked almonds.

  3. Add 2 large handfuls of sultanas into a bowl and cover with boiling water.

  4. Grab a large mixing bowel. Add your leftover turkey, 6 tablespoons of yogurt and 1 1⁄2 tablespoons of mayonnaise.

  5. Add 1 heaped tablespoon of mango chutney. Add a level tablespoon of curry powder, a handful of chopped coriander, salt and pepper.

  6. Add your toasted almonds and your soaked & drained sultanas. Squeeze in the juice of half a lemon. Mix everything together and taste it. If it could do with a touch more curry powder, add some!

  7. Remove potatoes from the oven. Slice them down the middle and stuff with the coronation turkey.

  8. Garnish with leftover coriander leaves and tuck in!

 

Way 2: Smokey Turkey Fajitas

Such a fun way of dealing with leftovers.

Cooking Time (includes preparation time): 1 Hour

Ingredients:

  • 500g of Leftover Turkey

  • 8 Tortilla Wraps - £0.95

  • 1 Lime - £0.35

  • 1 Bunch of Coriander - £0.70

  • 2 Avocados - £1.89

  • Sour Cream - £0.65

  • Cumin - £0.85

  • Smoked Paprika - £0.85

  • 2 Red Onions - £0.42

  • 4 Peppers (Not Green) - £2.20

  • Total Cost - £8.86 - This covers absolutely everything. All we assume you have in your kitchen beforehand is SALT, PEPPER AND OLIVE OIL.

Method:

  1. Finely slice peppers and onions. Add a splash of olive oil to a large frying pan & add the peppers and onion. Add a heaped teaspoon of smoked paprika and a heaped teaspoon of cumin. Cook until soft.

  2. Guacamole time. Add the flesh of two avocados into a bowl with a handful of chopped coriander and the juice of a lime. Mash.

  3. Back to the fajita filling. Once the peppers are soft, add your shredded turkey with 3 tablespoons of water. Mix everything together. Add a handful of coriander, season with salt and pepper and remove from the heat.

  4. Assemble time. Dollop a generous helping of sour cream onto a tortilla. Add heaped spoonfuls of the turkey. Top with some fresh guacamole and leftover coriander leaves. Wrap it up, shove it in your gob and enjoy!
