Leftover Pea Falafel (From MOB Veggie)
4 Tbsp of Coconut Yoghurt
Half a Cucumber
Bunch of Mint
400g of Cherry Tomatoes
1 Red Chilli
1 Red Onion
300ml of Red Wine Vinegar
Start by thinly slicing up your red onion. Fill a bowl with your red wine vinegar (or any vinegar you have) and place the onions into the bowl. Leave for at least 15 minutes and then remove the onions from the vinegar.
Into a bowl, add your coconut yoghurt. Next, grate your cucumber and add this to your yoghurt. Squeeze the juice of a whole lemon into the bowl. Finely chop up your mint (save a few leaves for garnishing) and whack it in, followed by a pinch of salt, pepper and a drizzle of olive oil. Mix together and your tzatziki is done!
Halve your cherry tomatoes and slice your chilli and add them to a separate bowl. Add a pinch of salt, pepper and a drizzle of olive oil.
Take your flatbread and add a dollop of the tzatziki and spread it around the flatbread. Take your falafel, break one up into smaller pieces and lay it across the tzatziki. Next, add a tbsp of your cherry tomatoes and a tbsp of your pickled red onion. Garnish with your remaining mint leaves and a drizzle of olive oil. Repeat this three more times, wrap it up and tuck in.
