2 Yellow Peppers

Old El Paso Smoky BBQ Seasoning Mix for Fajitas - 1 Sachet
Bunch of Coriander
Bunch of Mint
2 Blocks of Halloumi
8 Plain Tortilla Wraps
Old El Paso Chunky Salsa
150ml Sour Cream
50g Grated Cheddar Cheese
Bag of Tortilla Crisps
Slice up your onions and peppers into strips and add them to the pan with some olive oil. Once they have cooked, add 1/2 of a Old El Paso Seasoning sachet. Add a sprinkle of salt and pepper and stir. Next, chop up your coriander and mint and add to your pan (save a handful of mint for later) and mix together. Set aside.
Halloumi time. Slice up your halloumi and add to a bowl. Add your remaining Old El Paso Seasoning, along with a grinding of pepper and a glug of olive oil. Mix together with your hands so the halloumi is covered in the seasoning. Add your halloumi to a well oiled frying pan and cook until golden on both sides.
It’s loading up time. Add your tortilla to a pan. Heat for 1 minute on each side. Take your tortilla wrap and add a spoonful of your vegetable mixture. Then add 2 slices of halloumi, a squeeze of the salsa and a dollop of sour cream. Take your tortilla crisps and break them up into small pieces and scatter on top. Add a sprinkling of grated cheddar and your remaining mint. Repeat for the rest of your MOB and tuck in.
