Creamy Tomato Gnocchi With Herby Pesto

This is such an easy and delicious dish, you will love it MOB.

Cooking Time (Includes Preparation Time): 30 Minutes

Feeds: 4 People

Ingredients:

  • 500g of Gnocchi

  • 100g of Walnuts

  • Bunch of Basil

  • Bunch of Chives

  • Bunch of Mint

  • Olive Oil

  • 1 Tbsp of Red Wine Vinegar

  • 500g of Cherry Tomatoes

  • 1 Garlic Clove

  • Handful of Chilli Flakes

  • Salt

  • Pepper

Method:

  1. Lightly toast the walnuts in a frying pan. Once toasted, add them to a blender, followed by the basil, chives, mint, olive oil, a pinch of salt and pepper and a dash of red wine vinegar. Blend until smooth. (If you don’t have a blender just bash the ingredients in a zip lock bag).

  2. Add your cherry tomatoes to a frying pan with a drizzle of olive oil. As the tomatoes soften, roughly crush them with a spoon. Grate the gar- lic into the pan, add your chilli flakes, your red wine vinegar and pepper.

  3. Take a ladle of gnocchi water and add it to the pan and mix. Add your gnocchi and stir thoroughly. Pour some of your pesto over the top of the gnocchi and tuck in!
