Chorizo & Bean Mini Tacos

The easiest mini tacos, perfect for a dinner party.

Notes:

Follow the guacamole recipe to the letter - it is the ultimate.

Cooking Time (Includes Preparation Time): 35 Minutes

Ingredients:

  • 2 x Heinz Creationz Mexican Beanz Packs

  • 1 Ring of Chorizo

  • 1 Pepper

  • 1 Onion

  • 2 Garlic Cloves

  • 8 Plain Tortillas

  • 2 Avocados

  • 1 Bunch of Coriander

  • 1 Red Chilli

  • 1 Lime

  • 2 Spring Onions

  • 100g of Grated Cheddar

Method:

  1. Preheat your oven to 180 degrees.

  2. Remove the skin of the chorizo and cut into little chunks. Chop the onion.

  3. Put the chorizo in a pan and let it sizzle.

  4. Add the chopped onions and cook until soft.

  5. Add the Heinz Creationz Mexican Beanz Packs.

  6. Use a glass to cut out small circles from your large tortillas - repeat until you have run out of tortillas.

  7. Turn a muffin tin upside down and place each mini taco in the groove of the tin and bake for 20 minutes at 180 degrees.

  8. Guac time. Grab a bowl. Add the avocados, spring onion, coriander, fresh chilli, the juice of a whole lime, olive oil, salt and pepper. Mash together.

  9. Take your mini tacos out of the oven after 20 minutes. Add some of the bean mixture to each taco and a sprinkling of grated cheddar too. Place under the grill for 7 minutes

  10. To serve, sprinkle with spring onion and coriander. Dip in guacamole and enjoy!
