This recipe is so versatile - if you have a favourite flavour, replace it for that!
Feeds: 4 People
4 Sheets of Puff Pastry
2 Handfuls of Flour
Butter (small amount for brushing)
4 Tbsp of Mango Chutney
2 Tsp of Fennel Seeds
2 Tsp of Caraway Seeds
2 Tsp of Coriander Seeds
Pinch of Salt
100g of Grated Cheddar
3 Tbsp of Chipotle Paste
100g of Mozzarella
50g of Parmesan
Preheat your oven to 180°C.
Sprinkle the flour onto an even and clean surface. Place one sheet of puff pastry onto the floured surface. Add your mango chutney to the pastry and using a brush, (or anything that allows you to spread it) spread it around making sure the chutney reaches the very edge of pastry.
Evenly sprinkle your fennel seeds, caraway seeds, coriander seeds and salt over the top of the chutney. Add your cheddar, making sure it is evenly spread over the pastry. Press it down with your hands to make sure it feels nice and solid. Take a second pastry sheet and place it on top.
Next up, chipotle. Wipe down your surface and add another sprinkling of flour. Place a sheet of puff pastry onto the surface and add your chipotle paste to it, spreading it to the edges of the pastry. Next, add your mozzarella and parmesan. Press it down with your hands to make sure it feels nice and solid. Place the final sheet of pastry over the top.
Cut your pastry sheets into long thin strips (about 3cm wide). In order to twist, press the ends of the strips down before twisting the pastry in opposite directions (check the video on our socials if you’re struggling). Repeat this process for the remaining strips.
Brush all of the cheese straws with melted butter to give them a nice glazed finish. Bake for 30 minutes. Once they are done, take them out and share this wonderful snack with your MOB.
