MOB's 4-Way Noodles

Chicken Katsu Noodles

Cooking Time (Includes Preparation Time): 15 Minutes

Feeds: 1 person 

Ingredients:

  • 1 Itsu Katsu Rice Noodles Pot 

  • 2 Chicken Thighs

  • 2 Egg

  • 2 Tbsp of Flour 

  • 2 Tbsp of Breadcrumbs

  • Bunch of Coriander

  • 2 Radishes 

  • Olive Oil

  • Salt

Method:

  1. Cook the noodles according to packet instructions.

  2. Whisk your eggs in a small bowl. Sprinkle your thighs with salt and dip the pieces in the flour, coat them in the egg and then roll them in the breadcrumbs. 

  3. Heat a large glug of oil in a frying pan. Add the chicken thighs, cooking for 4-5 minutes each side. Once the chicken is cooked through and has a golden colour, remove from the heat and slice up.

  4. Pour the noodles into a serving bowl. Chop up your coriander and slice the radishes into thin discs. Place the chicken thighs on top of the noodles, then garnish with the coriander and radishes and tuck in!

Halloumi Satay Noodles

Cooking Time (Includes Preparation Time): 15 Minutes

Feeds: 1 Person

Ingredients:

  • 1 Itsu Satay Rice Noodles Pot

  • 1 Block of Halloumi (225g)

  • Knob of Ginger

  • 1 Tbsp of Peanut Butter

  • 1 Lime

  • 100ml of Coconut Milk

  • 2 Tbsp of Soy Sauce

  • Olive Oil

Method:

  1. Cook the noodles according to packet instructions. 

  2. Slice your halloumi into thin strips. In a pan, heat a large glug of oil, then place your halloumi in and fry. Cook for 3-4 minutes on each side, until the halloumi is golden brown.

  3. Peel and chop your ginger, adding it to a bowl along with the peanut butter, the juice of a lime, your soy sauce and the coconut milk and mix together and add this to the pan with your halloumi in.

  4. Turn the heat down and let it bubble until the sauce has reduced into a thick and creamy consistency.

  5. In a serving bowl place the cooked noodles and top with the halloumi satay, then enjoy!

Veggie Chilli Miso Noodles:

Cooking Time (Includes Preparation Time): 10 Minutes

Feeds: 1 Person

Ingredients:

  • 1 Itsu Chilli Miso Rice Noodles Pot

  • 1 Red Pepper

  • 2 Spring Onions

  • 1 Red Onion

  • 50g Mangetout

  • 1 Knob of Ginger

  • 1 Lemon

  • 1 Red Chilli

  • 2 Tbsp of Soy Sauce

  • Olive Oil

Method:

  1. Cook the noodles according to packet instructions.

  2. Roughly chop up your chilli and red onion. Slice your pepper, spring onions, ginger and mangetout into thin strips. Add all of these veggies into an oiled pan and begin to fry. As they become charred add the soy sauce and the juice of a whole lemon and mix.

  3. Once the vegetables are nicely charred, remove from the heat. 

  4. Place the noodles into a bowl, before topping with the fried veggies and tuck in!

Super Quick Fragrant Chicken Pho

Cooking Time (Includes Preparation Time): 10 Minutes

Feeds: 1 person

Ingredients:

  • 1 Itsu Chilli Chicken Rice Noodle Pot

  • 2 Chicken Thighs

  • 1 Tsp of Cinnamon 

  • 1 Tsp of Ground Coriander

  • 1 Red Chilli

  • Bunch of Coriander

  • Bunch of Mint

  • Olive Oil

  • Salt

  • Pepper

Method:

  1. Cook the noodles according to packet instructions.

  2. Slice the chicken into small pieces then coat the chicken with cinnamon, ground coriander, salt, pepper and a glug of oil. Rub the spices into the chicken and then put the chicken into an oiled pan and start to fry.

  3. Once the chicken is cooked through, remove from the heat.

  4. Finely chop the chilli, coriander and mint. Add the noodles into a serving bowl, before topping with the aromatic chicken and garnishing with the herbs and chilli– enjoy!
