Mob Leftovers (2 Ways)

Way 1: Coronation Turkey

Fresh inspiration for using up that leftover turkey.

Cooking Time (includes preparation time): 1 Hour

Ingredients:

  • 500g Leftover Turkey
  • 4 Jacket Potatoes - £1.32
  • Curry Powder - £1.00
  • Plain Yogurt - £0.85
  • Mayonnaise - £1.00
  • Mango Chutney - £0.87
  • Sultanas - £0.97
  • 100g Flaked Almonds – £1.30
  • Coriander - £0.70
  • 1 Lemon - £0.30
  • Total Cost - £8.31 - This covers absolutely everything. All we assume you have in your kitchen beforehand is SALT, PEPPER AND OLIVE OIL.

Method:

  1. Preheat oven to 180°C/356°F. Place jacket potatoes on a baking tray. Season with salt, pepper and olive oil. Place in oven for 1 hour or until soft in the middle.
  2. Toasted 100g flaked almonds.
  3. Add 2 large handfuls of sultanas into a bowl, and cover with boiling water.
  4. Into a large mixing bowl, add you leftover turkey. Add 6 tablespoons of yogurt, and a tablespoon and a half of mayonnaise. Add 1 heaped tablespoon of mango chutney. Add a level tablespoon of curry powder, a handful of chopped coriander, salt and pepper. Add your toasted almonds, and your drained soaked sultanas. Squeeze in the juice of half a lemon. Mix everything together. Taste it. If it could do with a touch more curry powder, add some!
  5. Remove potatoes from oven. Slice them down the middle, and stuff with the coronation turkey.  
  6. Garnish with leftover coriander leaves and tuck in! 

 

Way 2: Smokey Turkey Fajitas

Such a fun way of dealing with leftovers.

Cooking Time (includes preparation time): 1 Hour

Ingredients:

  • 500g Leftover Turkey
  • 8 Tortilla Wraps - £0.95
  • 1 Lime - £0.35
  • Bunch of Coriander - £0.70
  • 2 Avocados - £1.89
  • Sour Cream - £0.65
  • Cumin - £0.85
  • Smoked Paprika - £0.85
  • 2 Red Onions - £0.42
  • 4 Peppers (Not Green) - £2.20
  • Total Cost - £8.86 - This covers absolutely everything. All we assume you have in your kitchen beforehand is SALT, PEPPER AND OLIVE OIL.

Method:

  1. Finely slice peppers and onions. Add to a large frying pan with a splash of olive oil. Add a heaped teaspoon of smoked paprika and a heaped teaspoon of cumin and cook until soft.
  2. Guacamole time. Add flesh of two avocados into a bowl with a handful of chopped coriander and the juice of a lime. Mash.
  3. Back to the fajita filling. Once the peppers are soft, add your shredded turkey with 3 tablespoons of water. Mix everything together, add a handful of coriander, season with salt and pepper and remove from the heat.
  4. Assembly time. Onto a tortilla wrap spoon a generous dollop of sour cream. Then top with some heaped spoonfuls of the turkey. And top with some fresh guacamole and some leftover coriander leaves. Wrap it up, shove it in your gob and enjoy.
